what is the best organised cycle tour company in vietnam?
sorry dont know that one, but i can assure you viet nam is easily traveled and you can do it on your own. you dont need reservations to find accomodations. maps are easily obtained. people are very helpfull and friendly. i'm not sure where you would get a good 10 speed bike though i've seen "organized groups" with them. you may try and googel "nha trang viet nam" there are many informative links from the sites you will find there.
