Best family vacation destination?

I'm looking for an amazing off the beaten track vacation spot for my family (including a 16 year old girl and 14 year old boy) this june or august. it can be anywhere except the middle east. we are looking in to thailand and/or vietnam, but don't know if it will work b/c of the heat and rain. we'd like to see at least 2 or 3 diverse cities wherever we go. here are some aspects that are important:
-it would be great to experience another culture
-authentic feel
-fun activities like hiking, kayaking, exploring, elephant rides, rafting, zip lining, etc.
-reasonable weather- not freezing cold, but not boiling either
-good food
-not overly touristy!!
-interesting for both adults and teens

Consider a tour of some national parks and monuments if you have not done that - Yellowstone, Grand Canyon, Bryce Canyon, White Sands, Carlsbad Caverns, Guadalupe Mountains, Joshua Tree, and others. Or do a trip to Hawaii to see Haleakala and other sites. Hawaii is always temperate in terms of weather.
