travelling to vietnam & cambodia for 21 days. suggest cultural, scenic driving trips, rail &boat trips?
"5" star boutique hotels or best accomodations, eco lodges, local markets, meet local people, good food, culture sites, suggest itineraries, highlights. Starting point Hanoi, ending Cambodia. Plan to hire driver/guides with excellent references and command of English language:(suggestions ?), take boats and trains. Any and all suggestions welcomed. We are seasoned world travelers and love to "wing it", get lost, explore, take millions of photos and mostly avoid other tourists ! Please don't send me shopping; I'll do that in Paris !

This is just for Cambodia:
You HAVE to see Angkor temples in Siem Reap. Spend at least 3 days doing that, it is a huge area. Of course, you are going to run into a lot of tourists there, but it is still worth it..
Phnom Penh is a must-see also, it is like the wild west of SE Asia. Hire a tuk-tuk driver for daily sightseeing, they know all the main attractions and then some.
One of the best-kept secrets of SE Asia is Sihanoukville, a resort city in southern Cambodia. A lot of people have told me it is the same as Thailand was in the 70's. It has a very distinctive, laid-back atmosphere, and you can get a hotel room with air conditioning for $15-20 a night. Also, it is safe to rent a motorbike and just use that for transportation. There's still not that many tourists that go there, but that is changing fast. I've been there twice, and I loved it....
